2020 … can it fix that? Actually, comfort food does go a long way towards a fix, and this is an easy one. I love tomatoes … no matter how they’re served, and this soup is one of my all time favourites! It’s simple, zero fuss and deliciously healthy. What more do you want. As a chef of 30-years, I often look for ways to simplify restaurant dishes for home consumption. This is one of those simplifications.
Undoubtedly 2020 is a year in need of a tomato soup fix … I need to hold onto a bowl of hope. I’ve written about needing a few backup recipes in your repertoire – this is definitely one.
This is for (roughly) 4 starter or 2 main portions:
1/2 a red onion
1 large carrot cut into 1/2 inch chunks
6 large very ripe tomatoes
2 deseeded red peppers
Leaves, not stalks of 4 to five celery stalks
2 cloves garlic – cut lengthways into halves
1 teaspoon sea salt
1 teaspoon course ground black pepper
2 teaspoons dried parsley
2 teaspoons mixed herbs / Herbes de Provence
1 level teaspoon mustard powder
